Twinkie Berry Cake

~ Twinkie Berry Cake ~
(made for Mark’s birthday June 2007)


Step 1

1 box regular (vanilla) Twinkies
 Cut Twinkies in half and place filling side up in a 13x9 pan.
(Should be about 2 rows of 9 halves each - I had one twinkie left over)

Step 2

8 oz. cream cheese (softened)
14 oz. can Eagle Brand milk

 In a large mixing bowl, beat cream cheese & Eagle Brand milk together until smooth and sort of fluffy. (I used a mixer on medium speed for this.)

Step 3

8 oz. carton Cool Whip
 Fold Cool Whip into cream cheese mixture with spatula.

Step 4

2 pkgs. (10 oz.) frozen strawberries
OR
1 large bag of frozen mixed whole berries (I found this item at Bi-Lo)

 Partially thaw the berries and pour off the little bit of juice that forms.
 Put the berries in a mixing bowl, and add some strawberry pie filling (maybe a third of a bag?).
 Using clean hands, gently coat the berries and then put them on top of the cream cheese layer.



**Refrigerate cake for several hours or overnight before serving.
